London Dry Gin

  • Our modern take on a London Dry Gin showcases a zesty pop of coriander with citrus aromas on the nose, accompanied by umami and woodsy notes on the backend of the palate. Sitting at 96 proof, this London Dry Gin shines in any cocktail.

  • Juniper berries, coriander, angelica root, lemon peel, orange peel, orris root.

  • Most gins can be made in a couple of hours, depending on the distillation style. We soak our botanicals overnight in 96 ABV neutral grain spirit, put them into our hybrid (column/pot) still, and run the distillation for 5 hours. This allows the botanicals to be under pressure for a longer period, resulting in deeper extraction. This extraction showcases itself via nutty, earthy, resinous notes.

Barreled Gin

  • Our Barreled Gin is our flagship London Dry Gin finished on up to 4 different used red wine barrels: Pinot Noir French oak, Shiraz American oak, Cabernet Sauvignon French oak, and Port wine barrels.

    These juicy red wine barrels push those heavier, earthy botanical notes to the back burner, while also showcasing soft cereal notes. With chamomile and honey notes on the nose, this barreled gin offers a sweeter sipping style.

  • Juniper berries, coriander, angelica, lemon peel, orange peel, and orris root.

  • Depending on the freshly harvested red wine barrels we receive through our barrel broker, the aging process can vary by varietal. Our barrels store our gin for roughly 12-18 months.

Crane Gin

  • Our Crane Gin is inspired by an old Baltic herbal liqueur recipe, adapted to be enjoyed as a floral gin. Key impressions include: a slight perceived sweetness from chamomile notes; a woodsy flavor from rosemary; and a slight warming spice from both grains of paradise and clove.

    This floral gin has a boatload of floral and earthy flavors with soft, green juniper notes on the backend.

  • Juniper berries, rosemary, chamomile, patchouli, grains of paradise, lemon, and clove.

  • We do not use a gin basket, so all of our botanicals go into the pot portion of our still, which is then distilled through our columns.

    From a process perspective, this could be classified as a London dry gin, even though it presents itself wildly differently!

Aquavit

  • Our caraway Aquavit was our take on a German Kümmel, which is a caraway liqueur popular in northern Germany. Instead of barrel aging our Aquavit, we blended a small portion of bourbon, which softens the edges of the spirit and subdues the spirit's robust caraway character.

    The bready, warming aquavit is best served with tinned fish, frozen, or in many applicable gin cocktails!

  • Caraway, fennel, sweet orange peel, salt, sugar, bourbon.

  • We soak our caraway and distill it to a powerful caraway essence. Afterwards, we do a short maceration with coriander, fennel, and orange peel, at which point we incorporate the bourbon and adjust for salinity to make the botanicals pop.
